"World’s Best" Mac & Cheese
While strolling through the Pike Place Market, you can’t help but notice the factory and storefront for Beecher’s Handmade Cheese. The cheeses are handmade, and can be purchased there at the shop, as well as at various other locations.
One of the real cheese highlights, however, is Beecher’s “World’s Best” Mac & Cheese. It’s a delicious combination of penne pasta with Beecher’s Flagship cheese (a robust, nutty-flavored cheese), all bubbly and rich in flavor — the ultimate comfort food!
The recipe has been published in Pure Flavor: 125 Fresh Al-American Recipes from the Pacific Northwest, written by Kurt Beecher Dammeier, owner of four Pasta & Co. gourmet retail shops, Bennett’s Pure Food Bistro (Mercer Island), and creator of Beecher’s Handmade Cheese. This is his first cookbook, and he’ll be reading and signing the book at the University Book Store U-District location.
Location: University District Store, 4326 University Way N.E.
Date & Time: Wednesday, August 8th, 7 pm. The book store is open Monday - Friday 9 am - 9 pm; Saturday 10 am - 7 pm, and Sunday noon - 5 pm.
I consider myself somewhat of a mac and cheese connoisseur, and I think this is some of the best. This recipe, and others in the book, would make a welcome addition to the “local” section of my cookbooks.
